Hi I've been asked by my infrastructure project manager to look into
monitoring exchange through SCOM, but we're currently running exchange in a
VCS clustered environment, the annoying thing is, we're using 5.0, which
doesn't have a management pack for the HA version of the software.

If I were to install just the normal exchange MP into SCOM, would it flag up
non-existant errors with the inactive VCS nodes?

The Exchange MP only detects and monitors Windows Clusters. It does not
understand a Veritas Cluster intrinsically and I have heard of problems with
the failover of the Exchange server in a Veritas cluster causing loss of
data in Operations Manager because the failover looks like the deletion and
creation of a new Exchange server to Operations Manager.
